Easy Fruit Cake
Mix an old-fashioned fruit cake in just minutes.
Also delicious cooked as a slice, then topped with lemon icing.
Ingredients
500gms Fruit Cake Mix 3 eggs 250mls water
500gms dried fruit
1. Place the mix in a bowl, add the eggs and water and beat on low until moistened.
2. Beat on medium high for about 1 min.
3. Stir in the dried fruit.
4. Pour into a silicone paper lined and greased 9” (23cm) round cake tin.
5. Bake in moderately low oven for ¾ – 1 hr.
Easy Christmas Cake
To make a really easy Christmas cake, soak the fruit in a good slurp of brandy overnight.
Ingredients
500gms Fruit Cake Mix 3 eggs 250mls water
750gms dried fruit ¼-½ C brandy, rum or sherry
1. Pour alcohol over the fruit in a bowl, stir and cover, leave overnight.
2. Place the mix in a bowl, add the eggs and water and beat on low until moistened.
3. Beat on medium high for about 1 min.
4. Stir in the dried fruit.
5. Pour into a silicone paper lined and greased 9” (23cm) round cake tin.
6. Bake in low oven for 1-1½ hrs.
Easy Christmas Pudding
Can also make a really quick and delicious Christmas pudding, just steam in the usual way.
Ingredients
165gms Fruit Cake Mix 1 egg 90mls water
250gms dried fruit ½ C biscuit or bread crumbs or almond meal
1. Place the fruit in a bowl and pour on ¼ C brandy or sherry, warm in microwave for a minute or two. Leave to become cold.
2. Place the mix in a bowl, add the egg, and water and beat on low until moistened.
3. Beat on medium high for about 1 min. Blend in the crumbs.
4. Stir in the dried fruit.
5. Pour into a pudding bowl (greased and lined if not plastic).
6. Place in a saucepan of boiling water and steam for 2-3 hours, until well cooked.
7. Remove from the saucepan, take off the lid and allow the pudding to cool.
8. Replace the lid and refrigerate until Christmas.
9. Reheat the same way before serving, or use the microwave carefully.
